UMARELL – A NEW ITALIAN RESTAURANT OPENING AT DICKSONSKA PALATSET IN AUTUMN 2025

For those who’ve been wondering what’s been going on behind our closed doors, we are pleased to share that they will soon open to the public. In September 2025, Gothenburg locals will be welcomed into the beautiful ground floor of Dicksonska Palatset, where the restaurant Umarell will begin taking its first bookings. The Italian restaurant is a new collaboration between Oliver Ingrosso and Louise Johansson, and aims to become a vibrant meeting place within the city’s most iconic Renaissance building.

The name Umarell is an Italian expression describing elderly men who curiously observe construction sites – a fitting reference in this context. During the extensive renovation, many passersby have looked in with curiosity, wondering what was happening inside. Soon, they will be able to step in, take a seat in the grand dining room or at one of the two bars, and enjoy a menu that pays tribute to Italian cuisine and the heritage of Dicksonska Palatset – with heart and soul.

The restaurant is intended to accommodate both spontaneous visits and special occasions, according to Oliver Ingrosso, one of the project’s front figures. At Umarell, you should feel just as welcome dropping in for a simple bite as you would celebrating something special or enjoying a nice date. It’s a place for a mid-week pasta or a festive dinner, all set in an environment where elegance meets warmth. The menu takes its inspiration from traditional Italian flavors, prepared with care and with a clear ambition to reflect the unique character of the palatset’s historic halls.

The Creators Behind Umarell

Louise Johansson became a household name in Sweden after winning the first season of Sveriges Mästerkock in 2011. Since then, she has worked at several acclaimed restaurants, including Upper House and Salt & Sill, and claimed victory in Kockarnas Kamp in 2022. With Umarell, Louise opens her very first restaurant, rooted in West Coast flavors, seasonal vegetables, and joyful cooking.

Oliver Ingrosso is the restaurateur behind the acclaimed Italian restaurant Olli in Stockholm. His cooking is driven by a deep passion for Italian cuisine, something that’s been part of him since childhood. In addition to his restaurants, he’s the co-founder of the food brand Mino and Ollis Deli. With Umarell, he brings his vision of modern Italian food to Gothenburg – in the heart of one of its most treasured buildings.
